31 Dec 12 Stuffed Anaheim Chili Peppers – Chicken and Shrimp

Anaheim chili peppers stuffed with chicken and shrimp

Previously I made regular stuffed bell peppers, I heard about the Anaheim Chili Peppers so decided to give it a shot this time. These peppers have a slight kick to them, however they are not very hot. I used the following ingredients:


  • Half Rotisserie chicken from Kroger
  • Approximately 15 Shrimp cut in half (I used the $5 package from Walmart)
  • 4 Anaheim Chili Peppers cut longways and boiled like below
  • Anaheim Chili Peppers

  • 1 Carrot peeled like shown below

  • Half of red bell pepper diced up with a carrot like shown below
  • Diced up carrots and red bell pepper

  • 1 Tomato sliced thick so that it can be grilled
  • Grilled tomato

  • Heinz 57 Sauce
  • Heinz 57

  • Open Pit BBQ Sauce Original, for some reason it is difficult to find this one. I think I bought it from Walmart or Publix. Used last of it.
  • Open Pit BBQ Original

  • White rice (boil in a bag)
  • Fresh Garlic, Fresh Giner, Balsamic Vinegar, Olive Oil, Black Pepper, Salt, curry powder, cajun seasoning, shredded cheese (whatever you like, I used Mozzarella

Cooking Steps:

First order of business was to start mixing the meat with spices and stuff and let it soak for about an hour.

  • I took the chicken off the bone and into small pieces, cut the shrimp into two pieces and mixed them all up in a bowl
  • I added fresh garlic, fresh ginger, open pit BBQ sauce, Heinz 57 Sauce, little bit of balsamic vinegar, cajun seasoning (not the cheap 99 cents one, you have to use the one that has a black top I think it is around $3 or $4). Now mix it all up really good an let it soak for about an hour or so.
  • Close to an hour take the mixture out, saute red onion and cook the mixture in it
  • I put the peppers and rice in two different containers and started to boil them when it was close to reaching an hour, once done put them both on the side
  • Now take the Anaheim chili peppers and add the mixture in the peppers, stuff them up good

  • Now time to bake the Anaheim Chili Peppers after stuffing them, just add your favorite shredded cheese on the top and put them in the oven (pre heated to 350 degrees)
  • While those peppers are baking I started on the tomatoes and rice. I put the tomatoes on my grill/skillet and started to grill them. Added salt and pepper to the diced up carrots and red bell peppers, some fresh garlic
  • Now start cooking them in some olive oil until they start to look cooked
  • Diced Carrots and red bell peppers - cooked

  • Next step I added boiled white rice to this mixture and a bit more black pepper and a pinch of salt. Cooked it for like 2 min on med heat, had to add a little bit of more Olive Oil

  • Now by this time Tomatoes were ready and stuffed Anaheim chili peppers were baked. Time to put it all together. Finalized version shown below :)

26 Dec 12 Stuffed Peppers with Tomato Sauce

Stuffed peppers with tomato sauce, ground beef and rice – Pizza style

I love Bell Peppers, hence why I kept trying to make stuffed peppers and finally was able to get them to taste like I wanted them to. Believe it or not it was a very simple trick ;) . So my last try here are the ingredients I used:

  • 1.5lbs Ground Beef 80%
  • 10 Min rice lol yeah I know I took a short cut
  • 3 Bell peppers (Green, Yellow and Orange)
  • Half red Onion
  • Garlic (Gotta have garlic)
  • 3 tomatoes (the softer oval shaped ones)
  • Paul Newmans’ Basil, Garlic tomato sauce
  • Olive Oil
  • Parmesan cheese and shredded mozzarella

Now I had everything for my creation I followed the steps outlined below:

  • I chopped up half of the red onion really fine and put it in a bowl with ground beef
  • Added some freshly chopped garlic, those 3 tomatoes, Parmesan cheese and some tomato sauce
  • Now once all this is mixed up I started boiling the rice
  • This is important, I also cut the bell peppers side ways and started boiling them (this was the part that I was missing before)
  • Next I put the ground beef mixture in a pan and started to fry it. When it turned brown I put it all in a big bowl. By this time Rice was done boiling too so I added rice and some more tomato sauce to this mixture. Mixed it all up.
  • Now time to take the Bell Peppers out. It is important to make sure that they are boiled but not very soft. Now I added the mixture into the bell peppers. Added some shredded mozzarella and then Parmesan
  • Put them all in a dish and then in the oven that was pre heated 350 degrees
  • Once I saw the cheese melt and turn brown a bit they were ready to serve :)

26 Dec 12 Watermelon Carving – Batman Logo

Carving Batman Logo on a Watermelon

Watermelon Carving is something I have done a few times but just recently I had the chance to jump into it after a long time so I took the opportunity. I don’t really have any tools so I just used a regular knife and a small pairing knife. I planned on carving a batman logo, since I did not have the right tools and knives weren’t that great I decided to just print out the logo and then use it to guide my hand.

Here are the steps that I followed:

  • First I put the watermelon perpendicular to me and cut it “|” way (vertical) and then “_” way (horizontal)
  • Next I took out all the pulp
  • Now the fun part, I turned the watermelon around so the back side of it was facing me i.e; the part that was not cut
  • Then I put the batman logo in the center and used the small knife to put small holes around the logo. This way I can use these holes to cut the final piece out
  • Once done I used a little bit longer knife to cut the longer lines and then a small knife to take care of smaller areas that I had to cut
  • And after about 30 min or so I was able to successfully take the piece out
  • Next I just cut some mixed fruit and filled the watermelon with that fruit
  • So now there was a hollow Batman logo on one side and the full piece in the front
